Sultana Almond Cake

Ketika penerbangan pulang dari labuan, saya order christmas combo meal. Ada pilihan hot meal and a slice of fruit cake! Sebenarnya saya minat simple fruit cake. Mak selalu masak kek kukus buah yang agak padat dan sangat manis.

Kemudian saya terjumpa resepi ini dalam akhbar 'The Star'. Memandangkan bilangan ahli rumah sudah bertambah sorang ( suami bercuti seminggu sempena CNY), saya pun mencuba kek ini dengan jayanya. It is light and crunchy. Then, there was some leftover, so I use it to make a trifle.


Sultana Almond Cake

100g sultanas
30g almonds (sliced)
30g self-raising flour
150g unsalted butter
140g caster sugar
1 tsp vanilla essence
3 eggs
pinch of salt
2 Tablespoon fresh milk

Sift
120g self-raising flour
1 tsp baking powder

1. Grease the sides and base of 18 cm cake pan.
2. Combine sultanas, almonds with flour. Toss well.
3. Cream butter, sugar and vanilla until light and fluffy. Beat in eggs one at a time.
4. Fold in sifted ingredients and stir milk to mix. Then add in sultanas and almonds.
5. Turn the mixture into the prepared cake pan and bake in preheated oven at 160ΒΊC for 1¼ to 1½ hours.

Alhamdulillah hari sukan ke 21 berakhir hari ini. Cuaca sangat panas dan semua gembira latihan sukan sudah pun tamat.Mujur tiada murid yang pengsan ketika perbarisan pagi tadi.
